Traditional shrimp scampi is often loaded with butter, white wine, and served over refined pasta, which can cause blood sugar spikes. This recipe offers a healthier twist by:

  • Replacing Pasta with Zucchini Noodles: Zucchini noodles, or "zoodles," are low in carbohydrates and calories, making them a fantastic alternative to pasta for people with diabetes. They are also a good source of fiber, which helps regulate blood sugar levels.

Instructions:

  4. Deglaze the Pan: If using, pour in the white wine and chicken broth. Bring to a simmer and cook for 2-3 minutes, allowing the sauce to reduce slightly.
  5. Add the Zucchini Noodles: Add the zucchini noodles to the skillet and toss gently to coat them with the sauce. Cook for 2-3 minutes, or until the noodles are tender-crisp. Avoid overcooking the zoodles, as they can become mushy.
  6. Combine and Serve: Return the cooked shrimp to the skillet. Add the chopped parsley, lemon juice, and red pepper flakes (if using). Toss everything together to combine. Season with salt and pepper to taste.
  7. Serve immediately: Serve the Shrimp Scampi with Zucchini Noodles hot, garnished with lemon wedges.

  • Add other vegetables: Feel free to add other vegetables to this dish, such as asparagus, bell peppers, or spinach.
