Guilt-Free Cookies

Fresh cookies that satisfy any sweet tooth and are HEALTHY! These guilt-free cookies are packed with fiber, antioxidants & anti-inflammatory properties.


Say hi to my ridiculously chewy, thick, and guilt-free diabetes cookies. WAIT…WHAT? I swear this is not a joke! These guilt-free cookies will satisfy your sweet tooth and are the perfect treat for diabetics. Why? Well… let’s dig into the details.

Oatmeal: Contains complex carbohydrates which are useful for managing blood sugar levels. Not to mention, oatmeal is a high fiber and low-glycemic food.

Bananas: The ADA outlined that individuals with diabetes should incorporate a diet that implements fruits and vegetables daily. Bananas are an all-natural source of carbohydrates and are full of potassium, fiber, vitamin B6, vitamin C, and manganese.

Cinnamon: Packed with a variety of protective antioxidants and anti-inflammatory properties, cinnamon has immune-boosting capabilities to help fight off infections and viruses.

Apple Sauce: This is at the top of my baking SWAP THIS FOR THAT list. For guilt-free baked goods, applesauce can be substituted for many oils while containing the benefits of both fiber and various vitamins.

BONUS! I like to add heart-healthy walnuts & dark chocolate to my guilt-free cookies. Walnuts have always been known to improve heart-health; Yet, the newest research is showing that walnuts may even reduce the risk of Type 2 Diabetes! 


Prep Time: 5 minutes

Cook Time: 15-20 minutes

 
Ingredients:
  • 3 ripe bananas, mashed
  • 1/3 cup unsweetened applesauce
  • 2 cups oats
  • 3 Tbsp. milk (nut-milk works too)
  • 1 tsp. vanilla
  • 1 tsp. cinnamon
  • Optional: 1/2 cup chocolate chips, dried cranberries and/or walnuts

Instructions:

Preheat oven to 350 degrees.

Combine all ingredients in a large mixing bowl and stir until well combined.

Place spoonfuls of mixture onto a greased cookie sheet and bake for 15-20 minutes. 

Remove from oven & let cool. ENJOY! (makes approximately 20 cookies)
